Vegan food trucks and vegan restaurants are still 1 in a million in Texas. That translates into 1 restaurant per 1 million Texans. The small percentage of vegan food trucks makes it difficult to get started, keep rolling and build a following. Vegans are a loyal crowd and finding a vegan food truck who is serving or who can cater is like hitting the lotttery.
